Der Proteinteil zeichnet sich meist durch einen hohen Gehalt an Hydroxyprolin aus, und für einige AGPs wurde bereits gezeigt, dass das Protein über Verknüpfung zwischen Hydroxyprolin und Galaktose oder auch Arabinose mit vielen Kohlenhydrateinheiten verknüpft sein kann.
